Raspberry Hit Oat Bars

Here's an oaty treat to give you a real raspberry hit! It's adapted from Hummusapien's Raspberry Oatmeal Bar recipe, so I am taking next-to-no credit for this. My version is oil and salt-free, and I subbed raspberry jam for applesauce, because I didn't have any of the latter, and I subbed golden for maple syrup for the same reason. Also, I just used all rolled oats, rather than a proportion of the mix being oat flour, because I wanted my bars to have a rough texture. But otherwise, it's the same.

You can check out Hummusapien's post for the method; I mixed the jam into the mixture, rather than layer mine, but you can do either. Here are the ingredients you will need if you want to follow my lead:

For the raspberry chia jam:

  • 2 cups frozen raspberries

  • 2 tbsp chia seeds

  • 3 tbsp golden syrup

For the bars:

  • 3 cups rolled oats (GF if necessary)

  • 2 tbsp brown sugar

  • ½ tsp cinnamon

  • ½ tsp baking soda

  • ½ cup raspberry jam

  • ¼ cup golden syrup
