How yummy does this look! The perfect vegan comfort food. Here's how to make your own pizza pasties!
Makes approx 8-10
250g wholemeal plain flour
250g self raising flour
500g vegan marg
1/2 tsp sea salt flakes
2tbsp extra virgin olive oil
a splash of balsamic vinegar
a splash of light soy sauce
1 red onion, thinly sliced
3 cloves garlic, crushed
5 sun dried tomatoes - roughly chopped
1 red pepper & 1 yellow pepper, cubed
1 courgette, sliced
handful of mushrooms, chopped
1 aubergine, cut into small cubes
handful of black olives
cracked black pepper / sea salt
200g vegan mozzarella cheeze - Bute Island sheeze :) my fave
I get this from Sainsburys - I think Asda stock it, too….
you could also use a combo of cheddar and mozz or Applewood smoked
which would be terrific!
[if you don't want to use cheesy - you could add vegan sausage instead. I have used chickpeas in the past which have worked well.]
First make the pastry - combine the flours, sea salt add marg and mix into fine breadcrumbs. Add water until dough is formed. Chill in fridge for 20 mins.
Next the filling - fry onion until it is caramelised add garlic & sun dried tomatoes, cook for another few minutes. Add the rest of the veg…. peppers, courgette, aubergine, mushrooms, olives. Then a splash of all purpose soy sauce.
Leave for 15 mins on low heat with lid off, the mixture will have reduced, season to taste. Allow to cool…. I usually make this the day before so the flavours have time to develop.
To construct the pasties - get the pastry out of the fridge - leave for about 10 mins…….
then roll out pastry into rounds - I use a side plate as a template or if you fancy making smaller or larger pasties, whatever you have available.
