Here's an easy, delicious and best of all, healthy breakfast idea for those lazy weekend mornings. Easy vegan oat pancakes take only three main ingredients plus a pinch of baking powder and an optional flavouring of your choice. In this example, I made chocolate pancakes, but you could make yours into peanut butter heaven by adding a tablespoon of peanut butter flour (e.g., PB2), or into spicy delights with a teaspoon of cinnamon. You could even have them plain so that your garnishes will do the talking.
The recipe could not be simpler:
*One cup rolled oats
*One cup soya (or other non dairy) milk
*One medium to large ripe banana
*Pinch baking powder
*Tablespoon cocoa powder (optional)
1. Blend the oats for a few seconds to make them more flour-like
2. Add all other ingredients and blend until smooth
3. Heat a frying pan until hot. If your pan isn't non stick you may add a spray of oil
4. Cook each pancake for a couple of minutes each side. Keep a careful eye on them as they burn easily. Turn when you notice bubbles forming.
5. Stack and enjoy!
These pancakes work well with maple (or golden) syrup and frozen berries, but you can experiment with your most perfect sides!
